Instant Pot Cauliflower Mash

Want that mashed potato feeling without all the carbs, starch and guilt?  Use cauliflower instead!  I used to HATE the stuff, but my taste buds were totally tricked into not realizing how delicious and similar to mashed potatoes this tastes!  And it’s also a home run because it’s done SO QUICKLY in the Instant Pot!

  • 2 heads of cauliflower
  • 1-2 cups of chicken or vegetable broth (use 1 cup instead of 2 if you want it to be thicker)
  • A little butter (about 1 tbsp), and add some salt and pepper to taste (start with 1/2 tbsp).  You can also add any other seasonings you desire – the sky’s the limit!

Once done cooking, you can spill out 3/4 of the chicken broth before mashing and then add a little milk (skim, whole, almond or whatever) and then transfer to a food processor or blender for it to be SUPER creamy.  Like a delicious purée!  Heck, sprinkle in some cheese if you want so it gets all gooey inside!   You can fool ANYONE into believing they are eating mashed potatoes – guaranteed!

Make it Vegan-friendly by subbing the necessary ingredients to make it so!

  1. Separate the cauliflower heads into large chunks and discard the stalk and all green leaves.
  2. Add the trivet to the Instant Pot 
  3. Add the chicken broth
  4. Place the cauliflower chunks on top and seal lid
  5. Set high pressure for 4 minutes and do a quick release when done
  6. Ladle out about out half the broth for a thicker consistency. Mash the cauliflower in the pot.
  7. Add the butter, salt and pepper or any other seasonings you love (I like to add some garlic powder/salt and a dash of curry!)
  8. Enjoy!
