Instant Pot Steel Cut Oats

Steel Cut Oats.  Another item I would have normally passed in the supermarket en route to the Pop Tarts.  But No!  Not anymore!  SO healthy, SO hearty, and SO satisfying – this is almost like a dessert for breakfast! What’s even better?  Making it SUPER QUICK in the Instant Pot! I got this recipe from cookingwithcurls.com and made a variation of my own!

  • 1 cup of steel cut oats (Don’t use the Instant kind!)
  • 2 cups of water
  • 1 cup of unsweetened cashew milk
  • 1 pinch of sea salt
  • 1 Macintosh apple peeled, cored and diced
  • 1 tsp of pure vanilla extract
  • 1/2 tsp of ground cinnamon
  • 1 to 2 tbsp of honey (or agave nectar)
  • A splash of maple syrup
  • 1/3 cup dried cranberries (optional)

Feel free to use any kind of nuts or granola as other stir-ins to your hearts’ desires 😁

  1. Add the water, milk, salt, and oats to to the Instant Pot.
  2. Put on the lid and lock into place. Select the Manual button to High Pressure and set the time to cook for 3 minutes.
  3. When the Instant Pot beeps, allow it to do a Natural Release (no Quick Release this time!) until the pressure pin drops. This usually takes 15-16 minutes.
  4. Stir in the vanilla, cinnamon, agave nectar or honey, maple syrup, walnuts, and cranberries. Adjust the sweetness as needed.
  5. Serve with additional cranberries and walnuts if desired.
  6. Enjoy! You can store leftovers in the refrigerator for up to 4 days. Reheat in the microwave.
